EccoSync allows you to extract recordings from your iPhone back-ups.

If you have recordings on your iPhone, it's simple.  Just sync your iPhone with your mac.  Then run EccoSync and choose a recording from the list.  You can play the recording right inside EccoSync, or save the VoiceNote file anywhere you want!
